主料:猪腿肉500克 辅料:香菇(鲜)100克,胡萝卜50克 调料:盐10克,白砂糖15克,酱油20克,味精4克,料酒10克,大葱15克,姜15克,淀粉(玉米)5克
制作: 1. 先将猪后腿肉洗净,放入凉水锅中,加入葱、姜各10克、料酒5克; 2. 用中火将肉煮至七成熟取出,凉后切成厚0.5厘米、宽3厘米、长5厘米的片; 3. 将水发冬菇去掉后根,夹在每片肉中间,将肉片整齐地码放在汤盘底部,碎料放在上面,加入盐、葱、姜末、酱油、味精、料酒、白糖、水250克; 4. 放入蒸锅中蒸40分钟,取出将汁倒入锅中; 5. 将一平盘扣在汤中,再反扣过来,使原料在平盘中成为碎料在下,整齐面在上的形状; 6. 其上面还可放些绿叶丝略加点缀; 7. 胡萝卜切成长3厘米、宽和厚均为0.5厘米的长,用水焯后在盘边码成十字形; 8. 炒锅上火,烧开后将水淀粉放入收汁,烧在砂料表面即可。本回答被网友采纳
