将内蒙古羔羊肉切成小粒。
然后剁~使劲剁~剁成非常细腻的肉茸为止。

剁肉的同时将摘好洗好的芹菜焯水。
焯到全部变成翠绿色、变蔫就可以了。

将剁好的肉馅放到盆里加水搅拌,水要多次少量的加,边加边搅拌。
一定要往一个方向搅拌。搅拌至肉不松不散又没有多余的水分为好。
