1:配方是豆瓣500克、油酥豆豉100克、胡椒粉15克、白糖30克、葱末80克、 色拉油1000克、糯米粉60克、水60克、味噌50克 、砂糖20克 、酒半茶匙 、盐半茶匙 。

2:切好姜末、蒜末、葱末,干红辣椒剁碎。把豆瓣剁成茸,与花生酱、甜面酱、蚝油一起装入盆中,搅拌均匀成混合料。先下姜末、蒜末、葱末、辣椒末炒香。然后用小火,加入冰糖用锅铲慢慢推匀即可。

3:做酱时,不能搅拌或翻炒,等锅中冒出均匀小泡,放入胡椒粉、酱红亮、味醇厚,等自然冷却后。
